Cashew Alfredo Sauce

Made by me, recipe from Vegansaurus!

Ingredients
Heaping 2/3 cup raw, unsalted cashews
1 1/4 cup water
Juice of 1 lemon
About 2 Tbsp. olive oil, for sauteing
1 small yellow or white onion, finely chopped
4 to 6 cloves of garlic, finely chopped
1/2 Tbsp. salt
3 scant Tbsp. nutritional yeast (large flakes)
1 tsp. pepper
1/4 tsp. nutmeg
2 tsp. coconut aminos, Braggs, or soy sauce
Instructions
Preheat over to 350 degrees.
Boil your cashews until they are soft. I boil mine on medium heat, it takes about 20 minutes. This will give you about 2 cups “soaked” cashews. Make sure you rinse the cashews before using them.
To make the cashew cream, I blend my cashews and 1 1/4 cup water to make 2 cups of cream. Your sauce may come out a little chunky, but some people like texture, right?
While your cashews are boiling, you can start sauteing the other ingredients.
On medium heat, saute your chopped onion in olive oil. Next, add your chopped garlic and cook a couple of minutes, until fragrant. It’s important you do not let the garlic brown, as it becomes bitter. Add all your spices (salt, pepper, nutmeg, soy sauce, and nutritional yeast) and cook on medium-low heat for about three minutes, constantly turning the mixture with a spatula, as you don’t want it to burn, or the garlic to brown.
Now add the lemon juice. Cook until it’s hot, about a minute or two. If you haven’t made the cashew cream, do that. Then add your sauteed mixture to blender or food processor and blend until smooth! Taste. I like the seasoning mix I came up with, but we all have different palates. Do you like a cheesier flavor? More nutritional yeast! Not salty enough? Have at it! Adjust to your liking.

Now prepare your noodles and your extras. I added carrot, spinach, and asparagus. Mix everything together and bake.

Enjoy!

Practicing Self-Love

I'm on a journey of self-love in hope that loving myself will not only benefit the way I feel about myself, but help me to love the people around me unconditionally and without judgement. I want people to be able to meet me and feel comfortable. I want women to connect with me right away and not feel any sort of social competition or jealousy getting in the way. I want to support people and feel supported in return. I want to embrace every single type of person, body type, ethnicity, sexual orientation, personality, gender, everything. I want to play I key role in my community. I want to set a good example for the young men and women I come into contact with. I'm ready to love and be loved.

Also, Isn't my new painting pretty? :) I bought this Chris Austin piece this weekend as a little treat to myself and how hard I've been working in school and life in general.

Blogger Spotlight: Amy from Little Shop of Moore

Hey, Pals! As the giveaway is nearing its end it's time to introduce my very last guest, Amy! Amy is a super rad lady from Georgia who makes SUPER cute crafts. She was one of my very first followers and I'm super happy she's a part of this.

Danielle: Tell me about yourself!
Amy: The name's Ames, or Amy if you will!
I am an artist with a degree in digital media. My passions are Illustration and Photography and a more recent love and hobby is fiber arts. I work at a cafe during the day and do all of my creative work/handmade shop work after that. I am a vegan and a hardcore tea drinker. [ed note: HOLLA!]  I have serious interest in flowers (or plant life), anatomical curiosities, and space (I am a self-proclaimed "space cadet"). I am into philosophy and more recently yoga and spirituality (it's been a long time coming). I am all about soaking up insightful knowledge and learning new creative techniques; there is never a quiet moment inside of this head. I live with my amazing boyfriend and we just got a sweet old dog named Wicket. Life is pretty good here in the bear's den, won't you stop by?

Danielle: Tell me about your blog/etsy/small business!
Amy:  My blog is a journal of my personal and creative life; basically anything that makes me tick. I blog about my inspirations, interests, and what I am up to at the moment. I am a tad bit slow when it comes to blogging, but that is something that I am working on. My spirituality is now starting to play a part in my blogging life. My etsy shop is the first step in my starting my small business. I enjoy taking on freelance work (photography or illustration) and my etsy shop is where I sell all of my handmade pieces (and soon some illustration prints).

Danielle: How long have you been blogging?
Amy: According to my blog stats, I have been blogging for years, but this is not true. I started my blog years ago, but didn't really start posting in it up until about 2 years ago. Even those posts are pretty sporadic and not scheduled. Now I am working more towards scheduled posts and constant blogging.

Danielle: What is your most favorite past time?
Amy:  Daydreaming would have to be my favorite past time! I come up with so many good thoughts from daydreaming. I guess it kind of keeps me going. :]

Danielle: What are you listening to right now?
Amy:  R√∂yksopp - What else is there? Electronic music really gets me going these days!

Danielle:  Where do you see yourself in five years?
Amy: In five years I see myself completely self employed and living off of my creativity; or living as a full time artist. Collaborations and gallery receptions are a goal of mine. That's the dream anyway! I want to be married to the man that I am with right now and hopefully living in a city that is full of creatives!

Blogger Spotlight: Jamie from With Love, Jamie

Hey, everybody! It's time for you to meet one of the sweetest ladies I've ever met over the internet, Jamie. Jamie runs With Love, Jamie where she posts about her everyday thoughts and inspiration. She also runs This Years Love, an Etsy shop where she sells her cute handmade goods.

Danielle: Tell me a bit about yourself!
Jamie: Hello my name is Jamie, and I blog over at With Love, Jamie. I am a mom to a very energetic little 4 year old and a wife to a hard working, bike riding husband. I adore owls and I love all things handmade. I drink lots of coffee, love the colors black and purple, and couldn't live without good music! Oh and I love getting tattooed & antique shop hunting for matryoshka dolls!

Danielle: Tell me about your blog/Etsy/small business
Jamie: My blog is a mix of my daily life and my daily inspirations. I blog about the little things in my day that made me smile and I take a lot of pictures! I also like to share any kind of inspiration that comes my way, this blog has been great for me since I am the kind of person who falls in love with so many things and is getting truly inspired on a daily basis! My Etsy shop, This Years Love, is always changing up. Whatever inspiration hits me, I go with it. There is always a mix of jewelry and hand stitched items in there. Right now I am in love with skull jewelry, using buttons and feathers, and hair bows!

Danielle: How long have you been blogging?
Jamie: I have been blogging for a little over two years now. I started it to have a place just to ramble and save my favorite quotes or song lyrics. A place to document my memories. I have loved watching my little blog change and evolve over the years...it's neat to watch yourself grow!

Danielle: What's your favorite hobby/past time?
Jamie: I have a ton of favorite past times! I love doing arts & crafts projects with my son, spending full days antique hunting with my family, having coffee dates with my best friend while bouncing new creative ideas off of each other. It's all about the sweet little things.

Danielle: What are you listening to lately?
Jamie: to I have been listening to a lot of Eisley lately! I am completely in love with their music! Plus, I kinda have a girl crush on Sherri Dupree Bemis-her style is super adorable!

Danielle: Where do you see yourself in five years?
Jamie: In 5 years...wow, I really don't even know! Well, I hope to at least be in a new house with my family, something with a big backyard to play, have bbq's and hula hoop in, a house with an extra room so I can have a bigger creative space! I hope to have expanded my little handmade business and ventured into new things...in my dream world, I would have a cute little art gallery/crafty boutique downtown with my best friend :)
